Sussing out a summer season that looms large, I thought it might be instructive to a look at my 100 rules to see which ones were pie-in-the-sky and which ones still hold water, which ones were idealistic foam and which ones have stood up to the reality of Saturday nights.

Trends in Food for Restaurants in 2011

This year is looking very pie in the sky for the restaurant industry.

That’s according to Andrew Freeman of San Francisco’s Andrew Freeman & Co. Freeman’s company consults on marketing for restaurants and hotels nationwide, and he believes that the number one trend in the restaurant industry for 2011 will be pies.
